Mixed Wild Mushroom Pasta with Black Truffles

There are many recipes with simply pasta, parmesan and truffles which are delicious but I do love the addition of mushrooms. However I should probably add the disclaimer that I am inclined to the ‘more is more’ School of Thought!


  1. Bring a large pot of water to the boil.
  2. Place the dried porcini mushrooms in a cup of hot water and leave for 30 minutes.
  3. Remove the dried porcini retaining ¼ of a cup of the liquid and roughly chop.
  4. Heat the butter and oil in a frypan and sauté the mushrooms until they release their liquid and begin to brown.
  5. Stir in the garlic and porcini and cook for another 30 seconds before seasoning with salt and pepper.
  6. Add the chopped parsley and mix.
  7. Cook the pasta according to the packet instructions and drain.
  8. Transfer the pasta to the fry pan with the mushrooms and stir in the porcini water if it seems too dry. Serve and shave your truffle over.
